
Transport for Wales (TfW) has teamed up with Michelin-starred chef James Sommerin to launch an exclusive First Class dining menu, bringing gourmet Welsh cuisine to the rails.
Available from 7 April for eight weeks, the limited-edition menu will be served on select First Class services between Cardiff & Holyhead and Cardiff & Manchester. Designed by Sommerin and crafted by TfW’s own chefs, the menu showcases premium, locally sourced ingredients from across Wales.
Passengers can look forward to dishes such as slow-braised Welsh feather blade of beef with Blaenafon cheddar crumb, seaweed egg custard with crab and apple salad, and warm dark chocolate fondant with Merlin and orange cream.
James Sommerin said: “Bringing great food to unexpected places is something I’m passionate about, and I’m delighted to collaborate with TfW. For me, it’s all about flavour first – making food that people genuinely enjoy while celebrating Wales and everything it has to offer.”
TfW’s new state-of-the-art kitchen in Newport supports the initiative, preparing fresh dishes daily and reducing environmental impact by sourcing from Welsh suppliers such as Castell Howell.
Mark Roberts, TfW’s Head Chef, said: “This menu marks the next chapter in our commitment to accessible, high-quality travel experiences. First Class dining on TfW has been a hidden gem for too long.”
The three-course dining experience is available for £27.95, or £40 with a bottle of house wine. Customers can also bid for First Class upgrades via Seatfrog to enjoy the experience at a reduced cost.
The collaboration marks a new standard for onboard dining in Wales—combining culinary excellence with the convenience of rail travel.
